RICE CROQUETTES

RICE CROQUETTES (Frittelle di Riso)

INGREDIENTS (6 servings):

150 grams of Rice (not Parboiled)

Half a liter of Milk

2 spoons of Flour

2 Eggs

2 spoons of Sugar

30 grams of Butter

Lemon rind or Vanillin

50 grams of raisins

A glass of liqueur (Vin Santo or Brandy)

Half sachet of yeast

Salt (not much)

Oil for frying 

PREPARATION:

Boil milk with the addition of a glass of water, 2 tablespoons of sugar, a pinch of salt, butter and lemon rind.

Throwing rice and cook it until the liquid will be absorbed. Once cooked let everything cool. Combine the flour, egg yolks, a teaspoon of grated lemon rind, a glass of liquor, yeast and the previously soaked raisins.

Let rest for half an hour and incorporate the white egg mounted on snow and fry quickly in a frying pan with plenty of oil entering the compound with a single teaspoon. When the croquettes will be very colorful, put to dry on kitchen paper and soak with sugar on both sides.
